Our Story

After graduating from the National Institute of Boulangerie Patisserie in France in 2010 and gaining experience in some of Australia's finest bakeries, Dimitri Pittion opened Baker D North in 2020.

Our focus is to provide fresh, quality baked products without taking shortcuts. We use high quality butter in our croissants, natural yeast (Levain) in our sourdough loaves and baguettes and source local ingredients as much as possible. We work with local businesses who supply our meat, vegetables, eggs, milk and honey.

Long Fermentation is the key. It takes 3 days from the time we mix our croissant dough to the time we bake them. This process of bulk fermentation at cold temperature and rest between each turn offers enough time for the dough to develop, relax and build a rich complexity in taste and texture.

Catering Platters

Elevate any occasion with our Sweet or Savoury Platters, featuring an assortment of our favourite mini pastries. Our sweet platter includes some Almond Croissants, Berry Danishes, Chocolate Croissants, Frangipane Tarts and Raspberry Brownie Tarts. Our savoury platter includes some mini sausage rolls and mini ham and cheese croissants with the option to make it half vegetarian including our mushroom & cheese croissant and spinach and feta roll.
